Cherry-Tofu Smoothie recipe

A yummy vegan cherry smoothie.

Recipe: Cherry-Tofu Smoothie

2 cups frozen tart cherries, thawed anddrained, or 1 (16-ounce) can tart cherries, drained1 (12.3-ounce) package light silken tofu,cut up3/4 cup 100% ready-to-drink cherry juice2 tablespoons honey9 frozen or canned tart cherries,for garnish (optional)

  • In a blender container, combine 2 cupscherries, tofu, cherry juice and honey. Cover; blend until smooth.
  • Pour into 3 glasses. If desired, thread3 cherries on each of 3 (6-inch) bamboo skewers. Use to garnishbeverages. Serve immediately.

    Makes 3 (1-cup) servings.

    So, I know that cherry season is over, but we re going to use frozen cherries for this recipe anyway, so it s all good. Frozen fruit is ideal for smoothies because it adds thickness without ice and keeps the smoothie cold even after being heated up during its time in the blender. In fact, I have a sheet tray of frozen bananas in the freezer as I type this. But we ll get to that.
