Cheddar Potato Soup with Bacon recipe

A flavorful cheddar cheese, onion and potatosoup served topped with crisp, crumbled bacon.

Recipe: Cheddar Potato Soupwith Bacon

4 bacon slices, diced1 large onion, chopped1 pound boiling potatoes, peeled and cutinto 1/2-inch cubes1/4 cup all-purpose flour4 cups chicken broth1/2 teaspoon salt, or to tasteFreshly ground pepper to taste1/2 cup dry white wine2 cups grated sharp Cheddar cheese

  • Cook bacon in a large heavy saucepan overmedium heat, stirring occasionally,until crisp. Transfer bacon with a slotted spoonto paper towels to drain, reserving fat in pan.
  • Cook onion in reserved fat over moderateheat, stirring occasionally, untilsoftened.
  • Add the flour, cook for 1 minute stirringconstantly and then add the chickenbroth, potatoes, salt and pepper.
  • Bring to a boil, reduce heat and simmerabout 10 minutes, or until potatoesare just tender.
  • Add wine and simmer 1 minute. Reduce heatto low and gradually stir in cheese (do not let boil).
  • To serve, ladle soup into individual bowlsand sprinkle with bacon.

    Cheddar cheese, green onions and crumbled bacon are added with pre-baked potatoes to a roux-thickened milk base in this soup which is finished with sour cream. Potatoes and leeks sauteed in butter and olive oil, roughly mashed and blended with chicken stock, Cheddar cheese, and portobello mushrooms. What more could you want in one pot?
