A flavorful cheddar cheese, onion and potatosoup served topped with crisp, crumbled bacon.
Recipe: Cheddar Potato Soupwith Bacon
4 bacon slices, diced1 large onion, chopped1 pound boiling potatoes, peeled and cutinto 1/2-inch cubes1/4 cup all-purpose flour4 cups chicken broth1/2 teaspoon salt, or to tasteFreshly ground pepper to taste1/2 cup dry white wine2 cups grated sharp Cheddar cheese
Cook bacon in a large heavy saucepan overmedium heat, stirring occasionally,until crisp. Transfer bacon with a slotted spoonto paper towels to drain, reserving fat in pan.
Cook onion in reserved fat over moderateheat, stirring occasionally, untilsoftened.
Add the flour, cook for 1 minute stirringconstantly and then add the chickenbroth, potatoes, salt and pepper.
Bring to a boil, reduce heat and simmerabout 10 minutes, or until potatoesare just tender.
Add wine and simmer 1 minute. Reduce heatto low and gradually stir in cheese (do not let boil).
To serve, ladle soup into individual bowlsand sprinkle with bacon.
