Cheddar Cheese Soup recipe

A superb, deliciously creamy cheddar cheesesoup with a hint cayenne.

Recipe: Cheddar Cheese Soup

1/2 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
1/2 cup milk
3 cups chicken broth or 2 (10 3/4-ounce) cans condensed chickenbroth
3 cups half-and-half
4 cups (16 ounces) finely shredded Wisconsin Sharp Cheddar cheese
Dash cayenne pepper

  • Saut onion in butter over mediumheat.
  • Blend together flour and milk. Graduallystir into onion and cook 1 minute.
  • Add chicken broth and half-and-half. Heatto boiling.
  • Gradually add cheese, stirring constantly,until melted.
  • Stir in cayenne pepper. Serve hot.

    Makes 8 servings.
