Cashew Pea Salad recipe

A delicious pea salad with sliced greenonions and celery, crisp bacon and chopped cashews in a tastysour cream dressing.

Recipe: Cashew Pea Salad

Dressing:3/4 cup vegetable oil1/4 cup red wine vinegar1 garlic clove, finely minced1 tablespoon Dijon-style mustard1 teaspoon Worcestershire sauce3/4 teaspoon salt1 teaspoon lemon juice1/4 teaspoon pepper1/4 teaspoon sugarSalad:1 (10-ounce) package frozen peas, thawed2 celery ribs, thinly sliced2 green onions, thinly sliced1/2 cup sour cream4 bacon strips, cooked and crumbled3/4 cup chopped cashewsLettuce leaves and tomato wedges (optional)

  • For Dressing: Combine the ingredientsin a small bowl; mix well. Cover and refrigerate for 1 hour.
  • For Salad: In a large bowl, combine peas,celery and onions.
  • Combine sour cream and 2 tablespoons dressing(refrigerate remaining dressing for another use); mix well. Foldinto the pea mixture.
  • Just before serving, stir in bacon andcashews. If desired, serve on a bed of lettuce and garnish withtomato wedges.

    Makes 6 to 8 servings.
