Cashew Nut Cookies recipe

Frosted sour cream and brown sugar cookiesstudded with chopped salted cashews.

Recipe: Cashew Nut Cookies

2 cups all-purpose flour1 teaspoon baking powder1/2 teaspoon baking soda1/2 cup butter, softened1 large egg1 teaspoon vanilla extract1 cup firmly packed brown sugar1 cup sour cream1 cup chopped salted cashews1/2 cup butter2 cups powdered sugar3 tablespoons milk

  • Preheat oven to 375°F (190°C).
  • In medium bowl combine flour, baking powderand baking soda. Set aside.
  • In large mixing bowl, cream together 1/2cup butter, brown sugar, egg, vanilla andsour cream with electric mixer. Stir in the flour mixture untiljust blended and then stir in the nuts.
  • Drop dough by tablespoonfuls onto lightlygreased baking sheets. Bake for 8 to10 minutes or until edges are golden brown. Transfer to wireracks to cool completely.
  • For icing: Heat 1/2 cup butter in a saucepanuntil it is a light amber color. Remove fromheat and stir in powdered sugar and milk. Add more milk, if neededfor spreading consistency. Frost cooled cookies.

    Makes 3 dozen.
