Cashew Caramel Bars recipe

A this caramel and cashew-topped cookiebar is reminiscent of a candy bar.

Recipe: Cashew Caramel Bars

3/4 cup sifted all-purpose flour1/2 teaspoon baking powder1/4 teaspoon salt2 large eggs1/2 cup packed brown sugar1/2 cup granulated sugar1/2 cup chopped cashews1/4 cup packed brown sugar1 1/2 tablespoons light cream*1/3 cup salted cashews chunks2 tablespoons butter

  • Heat oven to 350°F (175°C).Grease 9-inch baking pan; set aside.
  • In medium bowl combine flour, baking powder,salt and 1/2 cup chopped cashews, mixing well.Set aside.
  • In a large bowl, mix the eggs and bothsugars together. Add the flour/cashewmixture to egg mixture and combinewell. Press into the bottom of preparedbaking pan.
  • Bake for 20 to 25 minutes.
  • While pastry bakes, mix 1/4 cup of brownsugar, cream and 1/3 cup cashews chunksinto the melted butter. Spread overbaked pastry and place under a broilerfor about 1 minute or until toppingbubbles and becomes brown. Cut intobars while warm. Let cool in pan.

    Makes 30 bars

    * Or substitute with evaporated milk.

    I m happy I discovered your blog, because these bars look 3 absolutely delicious! I love shortbread, salted caramel and cashews and can t wait to try them all together. And I definitely eat my baked goods sliver by sliver even if its within a span of a few minutes, it doesn t feel as naughty! Did you by chance try the microwave caramel that cooks in 6 min? It s made with sweetened condensed milk? I can t make candy but this recipe turned out great. Thanks
