Cashew-Butter Cookies recipe

Buttery cookies made with cashew pasteand rolled in ground cashews.

Recipe: Cashew-Butter Cookies

3/4 cup cashews
1/3 cup granulated sugar
3 tablespoons butter
1 large egg yolk
1 tablespoon milk
1/4 teaspoon baking soda
1/4 teaspoon vanilla extract
1/2 cup all-purpose flour
1 large egg white, beaten
3/4 cup finely chopped cashews
1/4 cup granulated sugar

  • Preheat oven to 350°F (175°C).
  • In a blender or food processor, processcashews to a smooth paste. Add sugar, butter, egg yolk, milk,baking soda and vanilla. Process until well mixed. Transfer toa bowl and stir in flour; mixing well. Cover and refrigeratethe dough for 30 minutes.
  • Shape into 1-inch balls and roll in beatenegg white then into 3/4 cups finely chopped cashews. Place 2-inchapart on a lightly greased baking sheet. Flatten with the bottomof a glass dipped in 1/4 cup sugar.
  • Bake 10 to 12 minutes, or just until lightlybrowned.

    Makes 20 cookies.
