Recipe: Carrot Cake Supreme

Cake:5 large eggs, beaten2 cups granulated sugar1 1/2 cups vegetable oil3 cups self-rising flour1 teaspoon baking soda2 teaspoons ground cinnamon1 teaspoon salt1 cup raisins3 cups finely grated carrots1/2 cup crushed pineapple1/2 cup sweetened flaked coconut1 cup chopped pecansIcing:1 (1-pound) package powdered sugar1 (8-ounce) package cream cheese softened1 1/2 cups butter, softened2 teaspoons vanilla extract1 cup chopped pecans1 cup crushed pineapple, drained1 cup sweetened flaked coconut

  • For Cake: Blend eggs, sugar and oil. Siftflour, soda, cinnamonand salt. Addto egg mixture. Fold in raisins, carrots,coconut, pecans and pineapple.
  • Pour batter into two 9-inch cake pans.
  • Bake at 350°F (175°C) for about40 minutes, check with wooden pickto test if done. Cool before icing.
  • For Icing: Blend the first 4 ingredients,then stir in remaining ingredients.
  • Spread between the layers and on topof cake.

    Makes 12 servings.
