Caribbean Milk Cooler.

Chill out with this icy tropical pineappleand milk drink.

Recipe: Caribbean Milk Cooler

2 cups fat free skim or 1% lowfatmilk
2 cups unsweetened pineapple juice
1 teaspoon vanilla extract
1 teaspoon coconut extract
2 tablespoons granulated sugar
Ice cubes
Mint sprigs, optional

  • In a blender container, combine all ingredientsexcept ice cubes and mint and blend on high speed until frothy.
  • Pour into four tall glasses filled withice cubes. Garnish with mint sprigs, if desired. Serve in a chilledglass.

    Makes 4 servings.

    Variation: For a thicker drink, freezepineapple juice in an ice cube tray. Blend these pineapple cubeswith all other ingredients except mint. Omit regularice cubes.
