Caramelized Peaches with Mango Coulis.

These delectable peaches are enhanced witha simple mango-flavored coulis. A short stay under the broilergives the surface a delicate crunchiness while leaving the resttender and juicy.

Recipe: Caramelized Peacheswith Mango Coulis

1 (11.5-ounce) can Mango KERNS® fromLIBBY’S Refrigerated All Nectar
1 tablespoon cornstarch
1/8 teaspoon ground nutmeg
2 large yellow peaches, halved and pitted
4 teaspoons granulated sugar
4 sprigs fresh mint, (optional)

  • Preheat broiler. Line baking sheet withfoil.
  • Combine nectar, cornstarch and nutmegin a small saucepan; stir until cornstarch is dissolved. Cookover medium heat, stirring frequently, until mixture just reachesa boil, 6 to 8 minutes. Remove from heat.
  • Place peach halves cut side up on preparedbaking sheet; sprinkle sugar evenly over peach halves. Broilfor 5 to 6 minutes or until sugar is caramelized and golden.Transfer to wire rack to cool slightly.
  • To serve, place about 1/4 cup mango coulison each serving plate. Top with one peach half, caramelized sideup. Garnish with mint.
