Cappuccino Caramels recipe

Coffee afficionados will delight in theserich espresso-and steamed milk-flavored confections.

Recipe: Cappuccino Caramels

2 1/4 cups brown sugar, firmly packed1 (14-ounce) can sweetened condensed milk1 cup butter, melted1 cup light corn syrup3 tablespoons instant coffee granules1/2 to 1 teaspoon grated orange rind1 cup chopped walnuts or pecans1 teaspoon vanilla extract

  • Line an 8-inch square pan with aluminumfoil; butter foil, and set pan aside.
  • Combine first 6 ingredients in a largeheavy saucepan; stir well. Cook over medium heat until mixturereaches firm ball stage or candy thermometer register 248°F(120°C), about 15 to 17 minutes, stirring frequently. Removefrom heat; stir in walnuts and vanilla.
  • Pour mixture into prepared pan. Cool inpan on a wire rack at least 5 hours. Cut into squares using abutter knife. Wrap each caramel piece in plastic wrap.

    Makes about 3 pounds.
