California Kiwifruit Squares recipe

Your family will love these dessert barsfeaturing a tender, shortbread base and a top layer made withpureed kiwifruit, eggs and hint of lime and finished off witha sprinkling of powdered sugar.

Recipe: California KiwifruitSquares

1 1/4 cups all-purpose flour1/3 cup powdered sugar – divided use1/2 cup butter or margarine1 cup granulated sugar2 California kiwifruit, pared and pureed2 large eggs, beaten1 teaspoon fresh lime juice1/2 teaspoon grated lime peel1/2 teaspoon baking powder

  • Combine flour and 1/4 cup powdered sugar;cut butter into flour mixture until mixture looks like cornmeal.Pat into 9-inch square pan. Bake at 350°F (175°C) for15 minutes.
  • Combine sugar, kiwifruit, eggs, lime juice,lime peel and baking powder; pour over baked crust. Return tooven. Bake for 20 to 25 more minutes, or until set.
  • Cool completely; sprinkle with remainingpowdered sugar.

    Makes 12 servings.
