Calico Bean Salad recipe

With five kinds of colorful beans, thissalad’s flavor and appearance is a real crowd pleaser, a greatdish to serve at your next picnic!

Recipe: Calico Bean Salad

1 (15-ounce) can garbanzo beans
2 (15-ounce) cans baby lima beans
1 (15-ounce) can cut yellow wax beans
1 (15-ounce) can cut green beans
1 (15-ounce) can red kidney beans
1/2 cup apple cider vinegar
3/4 cup vegetable oil
1 cup granulated sugar
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon pepper
1/2 teaspoon paprika
1 large onion, sliced and divided into rings
1 large green pepper, sliced and divided into rings

  • Drain and rinse beans; place in a largenon-reactive bowl or container with lid.
  • Mix vinegar, oil, sugar and the seasoningstogether; pour over beans.
  • Add the onion and green pepper slices;toss lightly. Refrigerate several hours or overnight, stirringseveral times.

    Makes 10 to 12 servings.
