Coffee-scented, butter-rich pound cakeflecked with sweet butterscotch chips.
Recipe: Butterscotch PoundCake
1 cup butterscotch flavored chips
Preheat oven to 350°F (175°C).Grease a 9 x 5-inch loaf pan.
Combine butterscotch chips, water andcoffee powder in the top of a double boiler. Place over barelysimmering water and stir until melted. Remove from heat.
In a large bowl, cream sugar and butterwith an electric mixer on medium speed. Beat in butterscotch-coffeemixture.
Combine flour, baking soda and salt ina small bowl. Add to the creamed mixture alternately with buttermilk,ending with flour.
Add eggs, one at a time, beating wellafter each addition.
Spread in prepared pan.
Bake 40 minutes or until set. Cool onwire rack.

2 tablespoons instant coffee powder
1 1/2 cups granulated sugar
1 cup butter, softened
3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
4 large eggs
