Butterscotch Potato Chip Cookies recipe

Sweet, salty and crunchy cookies, thesecookies won’t last long!

Recipe: Butterscotch PotatoChip Cookies

1 cup butter, softened
1 cup granulated sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
2 cups crushed potato chips
1 cup butterscotch flavored chips

  • Preheat oven to 375°F (190°C).
  • In a medium bowl, beat butter, sugar andbrown sugar with an electric mixer on medium speed for 30 seconds.Add eggs and vanilla and beat until smooth. Sift together flour,baking soda and salt in a small bowl. Beat into creamed mixtureon low speed until well combined. Stir in potato chips and butterscotchchips. Mix well.
  • Drop by rounded teaspoons 2 inches apartonto baking sheets.
  • Bake 10 to 12 minutes or until goldenbrown on the bottom. Cool on a wire rack.

    Makes 30 cookies.
