Recipe: Buttermilk PecanPralines
3 cups granulated sugar
1 cup buttermilk
3/4 cup light corn syrup
1 teaspoon baking soda
1/8 teaspoon salt
2 cups pecans
2 tablespoons butter
Makes 36 pieces.
Note: ‘Soft-ball stage’ is a testfor candy that describes the point at which a drop of boilingsyrup immersed in cold water forms a soft ball that flattensof its own accord when removed. On a candy thermometer, the soft-ballstage is between 234° and 240°F.
