Butter Pecan Pralines recipe

A southern favorite, buttery pecan pralines.

Recipe: Butter Pecan Pralines

2 cups granulated sugar
1 teaspoon baking soda
1/8 teaspoon salt
3/4 cup butter
1 cup buttermilk
1 teaspoon vanilla extract
2 cups pecans
Wax paper

  • In a large saucepan, combine sugar, bakingsoda, salt, butter, and buttermilk. Bring to a boil, stirringconstantly. Reduce the heat to medium-low and continue cookinguntil the mixture becomes caramel-colored and reaches the softball stage (238°F / 115°C).
  • Remove from the heat, add vanilla andpecans. Beat until thick enough to drop from a spoon onto waxpaper. If the mixture becomes too hard, heat and add a smallamount of water; stir until smooth.

    Makes 36 pieces.
