A delicious side dish of spiced cabbagewith green peas.
Recipe: Bund Gobi Aur Matar
1 small head green cabbage1 1/4 cup frozen peas1/4 cup vegetable oil2 teaspoons whole cumin seeds2 bay leaves1/4 teaspoon ground turmeric1/4 teaspoon cayenne pepper1 fresh hot green chili, finely chopped3/4 teaspoon salt3/4 teaspoon sugar1/4 teaspoon garam masala
Core the cabbage and slice into fine longshreds.
Put the peas in a strainer and hold themunder running water until they separate.
Preheat the oil over medium-high heatin a large heavy skillet. When hotadd the cumin seeds and bay leaves,cooking for just a few seconds. Quicklyadd the cabbage and peas, stirring to mix well.Add the turmeric and cayenne, mixing well. Coverand reduce heat to a simmer and cook for 5minutes, or until vegetables are crisp-tender.
Add the green chili, salt and sugar, stirto mix; cover and cook an additional2 minutes. Remove from heat, add thegaram masala, stir gently to mix andserve.
Serves 4 to 6.
