Buckwheat Bread recipe

A hearty, buckwheat bread recipe for breadmachines.

Recipe: Buckwheat Bread

1 cup water
1 tablespoon vegetable oil
1 tablespoon honey
1 teaspoon salt
1/4 cup powdered milk
2 cups unbleached bread flour
1/2 cup whole wheat bread flour
1/4 cup buckwheat flour
2 tablespoons cracked wheat
2 tablespoons wheat germ
2 tablespoons vital wheat gluten, or gluten flour
1 tablespoon potato flakes or buds
1 teaspoon active dry yeast

  • Place ingredients in the bread machinepan in the order suggested by the manufacturer.
  • Select Whole Wheat bread cycle and startmachine.

    Makes one (1 pound) loaf.

    It s the mucilage in on the buckwheat that lets this rise properly, so it s not going to be an exact fit. I have seen recipes that use buckwheat flour, so your best bet would be to Google those. You will definitely not get the same texture as the whole grain bread and the rise might be different, depending on how the flour was processed. Hmmmm very weird! Did you change the source of your buckwheat? Or was your water particularly chlorine-y smelling for the more recent batches? Has the temperature dramatically changed since the first two times you made it?
