Buckeyes recipe

Buckeyes are made of chocolate and peanutbutter and crafted to look like the dark nut of Ohio’s statetree, the Buckeye. These bite-size treats are a regional treat,but they’re so good, their popularity is spreading across thestates. This version adds a twist with the addition of grahamcracker crumbs.

Recipe: Buckeyes

1 cup creamy peanut butter1/2 cup finely ground graham cracker crumbs1 cup powdered sugar2 cups semisweet chocolate chips2 tablespoons vegetable shortening

  • Combine peanut butter, graham crackercrumbs, and powdered sugar in a bowlor a food processor until smooth. Refrigeratefor at least 1 hour.
  • Roll teaspoonfuls of peanut butter mixtureinto balls. Refrigerate until readyto dip in melted chocolate.
  • Melt chocolate chips and shortening togetherin the top of a double boiler untilvery liquid. Using a fork or a skewer, dip eachball into chocolate leaving just the very top of the ballexposed. Set on a foil or waxed paper-linedbaking sheet, setting each ball on thepeanut butter end. Refrigerate until the chocolate is firm.

    Makes 3 dozen.
