Buckeyes recipe

Buckeyes, chocolate and peanut butter candies,are crafted to look like their namesake, the shiny dark nutsof the Buckeye tree – the official state tree of Ohio.

Recipe: Buckeyes

1 cup creamy peanut butter1 cup butter or margarine, softened1/2 teaspoon vanilla extract4 cups sifted powdered sugar1 (12-ounce) packages semisweet chocolatechips (4 cups)

  • Beat peanut butter and butter at mediumspeed of an electric mixer until fluffy. Add vanilla, beatingwell. Gradually add sugar, beating until well blended.
  • Shape into 3/4-inch balls; place on ungreasedbaking sheets. Insert a wooden pick into top of each ball. Freezeat least 2 hours.
  • Melt chocolate chips in the top of a doubleboiler over simmering water. dip each frozen ball into chocolate,coating three-fourths of ball. Place on wax paper-lined bakingsheets, and chill until chocolate is set. Store in an airtightcontainer in a cool area or the refrigerator.

    Makes about 9 dozen confections.
