Braised Red Cabbage with Bacon recipe

This mixture is best sauteed just beforeserving; however, the cabbage and onion can be sliced in advanceand refrigerated, airtight. The apples can be sliced and storedin water with a little lemon juice to prevent them from discoloring.

Recipe: Braised Red Cabbagewith Bacon

1 large head red cabbage3/4 cup diced bacon1/3 cup granulated sugar1 1/2 cups sliced onion2 cups beef broth2 tablespoons balsamic vinegar3 tart green apples, peeled and slicedSalt and pepper to taste

  • Clean, core and quarter cabbage. Cut cabbagequarters into 1/4-inch-thick slices.
  • Cook bacon until lightly browned in apot or Dutch oven on medium-high heat. Add sugar and cook untildissolved, stirring frequently. Add onion and continue to cook2 to 3 minutes. Add cabbage, broth, vinegar and apples. Coverand reduce heat to a simmer. Simmer for approximately 45 to 50minutes or until cabbage is tender. Add salt and pepper to taste.
