Bourbon Creme Confections recipe

Spirited chocolate-covered bourbon pecanbonbons.

Recipe: Bourbon Creme Confections

1 cup finely chopped or groundpecans1 ounce bourbon1 (16-ounce) package powdered sugar
1/2 cup (1 stick) butter, softened
1 (12-ounce) package semisweet chocolate morsels or preferredchocolate1 tablespoon vegetable shortening

  • Combine chopped pecans with bourbon andset aside for 15 minutes.
  • Cream sugar and butter. Add pecan/bourbonmixture and mix well. Roll into 1-inch balls and place on a waxedpaper-lined baking sheet. Refrigerate for about 30 minutes oruntil well-chilled.
  • Melt chocolate and shortening in top ofa double boiler over simmering water. Using a wooden pick insertedinto a ball, dip into melted chocolate, coating well. Place onthe waxed paper-lined baking sheet; chill until firm. Store inan airtight container.

    Makes about 60 confections.

    This recipe can also use rum instead of bourbon and also you can use chocolate wafers instead of vanilla wafers. Be sure to age these for at least a few days in a tin before serving.
