Blueberry Bars recipe

Blueberry crumb bars made with canned blueberrypie filling.

Recipe: Blueberry Bars

1 1/2 cups all-purpose flour
1 1/2 cups quick cooking oatmeal
1 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, softened
1 (21-ounce) can blueberry pie filling

  • Preheat oven to 375°F (190°C).
  • Combine flour, quick cooking oatmeal (uncooked),brown sugar, cinnamon, baking powder, and salt in a food processorfitted with the steel blade. Add butter and process until themixture resembles coarse crumbs. Reserve 1 cup of the mixturefor topping.
  • Press the remaining mixture into a 9-inchsquare baking dish. Bake crust for 5 minutes; remove and addblueberry pie filling into the pan. Top with the reserved crumbs.Bakefor 25 minutes or until top is crisp. Cool on a wire rack beforecutting.

    Makes 16 bars.
