Blue Cheese Spinach Salad recipe

A flavorful salad mixture of fresh spinach,sliced mushrooms, cherry tomatoes and slice hard-cooked eggstossed in a creamy, homemade blue cheese dressing.

Recipe: Blue Cheese SpinachSalad

1/2 cup sour cream
1 1/2 ounces cream cheese, softened
2 tablespoons Wisconsin Blue cheese, crumbled
1 tablespoon dry sherry
1/8 teaspoon onion powder
1/8 teaspoon paprika
1/8 teaspoon salt
6 cups torn fresh spinach
1 1/2 cups sliced fresh mushrooms
1 1/2 cups cherry tomatoes, halved
3 eggs, hard-cooked and sliced

  • For Dressing: In a blender container orfood processor bowl combine sour cream, cream cheese, blue cheese,sherry, onion powder, paprika, and salt. Cover and blend or processuntil smooth. Cover and chill about 2 hours.
  • For Salad: In a large salad bowl combinespinach, mushrooms, tomatoes, and eggs. Cover and chill about2 hours.
  • To serve, toss dressing with the spinachmixture.

    Makes 8 servings.
