Blue Cheese and Spinach Salad recipe

A tasty salad mixture of fresh spinach,iceberg lettuce, sliced mushrooms, red onion rings and dicedtomato tossed in a creamy, homemade blue cheese dressing.

Recipe: Blue Cheese and SpinachSalad

1 (8-ounce) carton plain yogurt
1/4 cup (1 ounce) crumbled Wisconsin Blue Cheese
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 teaspoon dried basil leavesSalad:
4 cups torn iceberg lettuce
2 cups fresh torn spinach
1 cup sliced fresh mushrooms
1 cup red onion rings
1 medium tomato, diced

  • For Dressing: Combine yogurt, blue cheese,sugar, salt, celery seed and basil. Cover and chill.
  • For Salad: Combine salad ingredients;cover and chill.
  • Just before serving, pour dressing overgreens and toss lightly.

    Makes 4 servings.

    This blue cheese, corn and spinach salad recipe is delicious tossed with a warm bacon-spiked tomato vinaigrette. We love a full-flavored blue cheese like Maytag, but a milder blue cheese is also nice. This spinach salad is great with pizza or as a light side salad.
