Recipe: Blackberry Cake

Cake:4 large eggs1 cup granulated sugar3/4 cup butter1 cup blackberry preserves (seedless)1 cup buttermilk1 teaspoon baking soda2 cups all-purpose flour1 teaspoon each ground cinnamon,allspice & nutmegPinch saltCream Cheese Frosting:1 (8-ounce) package cream cheese1 (1-pound) package confectioner’s sugar1/2 cup (1 stick) butter1 tablespoon cream1 teaspoon vanilla extract

  • For Cake: Put soda in buttermilk and mixwell.
  • Cream sugar and butter. Addbeaten eggs and preserves; remainder of ingredients.
  • Bake at 375°F (190°C) in regularoven, in three 9-inch cake pans untilfork or wooden pick comes out clean.
  • For Cream Cheese Frositng: Cream cheeseand butter; add flavoring, sugar and cream; mixwell and apply to cake, between layers and then over entirecake. Bon Appetite!

    Makes 8 servings.
