Recipe: Black Forest Pumpernickel
1 1/8 cups water1/3 cup molasses1 1/2 tablespoons vegetable oil
1 1/2 cups bread flour
1 cup rye flour
1 cup whole-wheat flour3 tablespoons baking cocoa
1 1/2 teaspoons salt
1 teaspoon instant espresso powder (optional)
1 tablespoon caraway seeds
2 teaspoons active dry yeast
Makes one (1 1/2 pound) loaf.
