A very moist bar, richly flavored withbanana and chocolate.
Recipe: Black-Bottom BananaBars
1/2 cup butter, softened1 cup granulated sugar1 large egg1 teaspoon vanilla extract1 1/2 cups mashed ripe bananas (about3 medium)1 1/2 cups all-purpose flour1 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt1/4 cup baking cocoa
Preheat oven to 350°F (175°C).Grease a 13 x 9 x 2-inch baking pan;set aside.
In a mixing bowl, cream butter and sugar.Add egg and vanilla; beat until thoroughlycombined. Blend in the bananas.
Combine the flour, baking powder, bakingsoda and salt; add to creamed mixtureand stir to just mix. Divide batter in half. Add cocoa to half the batter; spread into preparedbaking pan. Spoon remainingbatter on top and swirl with a spatula or knife. Bake for 25 minutes or until the bars test done.Cool.
Makes about 2 1/2 dozen bars.
