Black Bean Soup with Cilantro-Lime Cream recipe

Recipe: Black Bean Soup withCilantro-Lime Cream

1 (16-ounce) package (about 2 1/2 cups)dried black beans6 bacon slices, chopped2 celery ribs, finely chopped1 large onion, finely chopped2 medium carrots, finely chopped10 cups chicken broth1 large tomato, seeded and chopped1/2 cup (packed) chopped fresh cilantro1 1/2 tablespoons finely minced garlic1 jalapeño chile, minced1 tablespoon red wine vinegar2 teaspoons ground cumin1 teaspoon ground coriander2 teaspoons salt, or to tasteFreshly ground pepper to tasteCilantro-Lime Cream:1 cup sour cream1 1/2 tablespoons fresh lime juice1/2 cup (packed) chopped fresh cilantroSalt and freshly ground pepper to tasteAdditional chopped fresh cilantro forgarnishAdditional chopped tomato for garnish

  • Place beans in large bowl. Add enoughwater to cover by 3 inches. Let standovernight. Drain well.
  • Cook bacon in heavy large pot over mediumheat until brown but still soft, about4 minutes. Add celery, onion and carrots and cook until vegetables begin to soften, about 10 minutes.Add beans, chicken broth, tomato, 1/2cup cilantro, garlic, jalapeño, vinegar, cumin and coriander. Bring to boil. Reduce heatto medium-low, cover and simmer soupuntil beans are very tender, stirring occasionally,about 2 hours. Add salt and pepper to taste.
  • Mix sour cream, lime juice and 1/2 cupcilantro in small bowl. Season to tastewith salt and pepper.
  • To serve, ladle soup into bowls. Placea dollop of the Cilantro-Lime Creamon top of soup. Garnish with additional chopped cilantroand chopped tomato.

    I was blown away by how delicious this soup is! Thick, creamy, hearty, and filling, it combines my love of all thing soup, with all things Chipotle. I have never made a black bean soup before either and was so tickled with how it turned out. Thank you!! The recipe looks delicious!
