A delicious, milk-free, fiber and protein-enrichedorange-strawberry ‘smoothie’.
Recipe: Berry Bean Blast
1 (15-ounce) can navy beans orgreat northern beans or 1 1/2 cups cooked, rinsed, drained
1 1/2 cups orange juice
2 cups quartered strawberries
2 to 3 tablespoons honey
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
6 to 8 ice cubes
Makes 4 servings (about 6-ounces each).
Tip: Berry Bean Blast can be made 1 to2 days in advance; refrigerate, covered. The drink will thickenin the refrigerator; stir in orange juice or cold waterfor desired consistency. Frozen strawberries can be used; ifusing frozen berries, ice cubes will not be needed.
