Belgian Christmas Cookie Bars recipe

These festive, buttery brown sugar shortbreadholiday cookie bars are topped with a mixture of cinnamon, finelychopped almonds and red and green tinted sugars.

Recipe: Belgian ChristmasCookie Bars

2/3 cup butter
1 teaspoon almond extract
1 cup packed brown sugar, packed
2 large eggs
1 2/3 cups all-purpose flour1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup finely chopped almonds
1/2 teaspoon ground cinnamon
2 teaspoons red sugar
2 teaspoons green sugar

  • Preheat oven to 375°F (190°C).Greased a 15 x 10 x 1-inch jelly roll pan; set aside.
  • In large mixing bowl, cream butter withextract; add brown sugar and cream until light and fluffy. Addeggs, one at a time, beating thoroughly after each addition.
  • Combine flour, baking powder, and salttogether; add in thirds to creamed mixture, mixing until blendedafter each addition. Turn into prepared jelly roll pan and spreadevenly to edges.
  • Sprinkle a mixture of almonds and cinnamonover batter, then sprinkle
    with a mixture of red and green sugars.
  • Bake for 10 to 12 minutes. Cut into barswhile still warm.

    Makes 5 dozen.
