This is the most expensive rice in theworld. For its expense, there is a good deal of preparation.However, there it is no other rice like it in the world, thegrain itself is very delicate and thin, an elegant rice, indeed.
Recipe: Basmati Chaaval -Plain Basmati Rice
2 cups Basmati rice
3/4 teaspoon salt
1 tablespoon butter*
2 2/3 cup water
Serves 6 to 8.
*If you want a more “authentic”taste of India, use ghee instead of butter. Ghee is clarifiedbutter or pure butter fat. Having no milk solids, it can be usedfor cooking at higher temperatures and can be stored withoutrefrigeration for up to 3 or 4 months. See how to make Ghee.
