Basic Corn Muffins recipe

A good basic corn muffin recipe, they’regreat alone warm with a pat of butter…but even better witha bowl of chili.

Recipe: Basic Corn Muffins

3/4 cup all-purpose flour
3/4 cup yellow cornmeal
1 tablespoon granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 cup buttermilk
1/4 cup butter, melted

  • Preheat oven to 400°F (205°C).Grease muffin tins or line with paper cups.
  • Combine flour, cornmeal, sugar, bakingpowder, baking soda and salt in a bowl. Mix with a fork.
  • In another bowl, whisk egg until smooth.Whisk in buttermilk and melted butter to combine. Pour into flourmixture and stir until evenly moistened.
  • Fill muffin cups three-quarters full andbake 15 to 20 minutes, or until a tester comes out clean.

    Makes 1 dozen muffins.

    This recipe was handed down to me from my mother. It s easy to make and the ingredients are probably already in your kitchen. Enjoy! Rice flour and cornmeal replace all-purpose flour in these gluten-free blueberry muffins that the whole family will love.
