Bannock – Off the Trail recipe

A rouind loaf of quick bread made withmashed potatoes.

Recipe: Bannock – Off theTrail

2 1/2 cups all-purpose flour3 tablespoons granulated sugar2 tablespoons baking powder1 teaspoon salt2 tablespoons butter or lard1 cup mashed potatoes1 cup milk

  • Preheat oven to 400°F (205°C).
  • In large mixing bowl, combine flour, sugar,baking powder and salt. Add butter,cutting in with a pastry blender.
  • Stir in mashed potatoes. Add milk andstir with a fork to form a ball.Turn out onto lightly floured surface andknead about 10 times. Place on ungreasedbaking sheet. Pat down to 1-inch thick.
  • Bake about 20 minutes or until well browned.

    Yield: 1 round.

    This recipe makes delicious communion bread that is completely unleavened and suited for religious purposes. It has a unique, chewy texture and the delicious taste of butter and honey. Great alternative to bland communion wafers or crispy matzo crackers. Kids at our church love it, and so do the grown ups.
