Banana Nut Pancakes recipe

Light, cream cheesy banana nut pancakes.

Recipe: Banana Nut Pancakes

1 (3-ounce) package cream cheese, softened1/2 cup non-dairy whipped topping1 cup pancake mix1 tablespoon granulated sugar1 large egg3/4 cup milk2 teaspoons vegetable oil1 medium ripe banana, mashed1/2 cup chopped pecans

  • In a small mixing bowl, beat the creamcheese until smooth. Mix in whippedtopping (mixture will be stiff); set aside.
  • In another bowl, combine pancake mix andsugar. Beat egg, milk and oil; addto pancake mix and mix well. Fold in banana and pecans.
  • Pour batter by 1/4 cupfuls onto a lightlygreased hot griddle; turn when bubblesform on top of pancakes. Cook until second side is golden brown.
  • Serve with cream cheese topping.

    Makes 8 to 10 pancakes.
