Baked Spinach with Three Cheeses recipe

This delicious side dish can also be servedas an appetizer by spooning portions atop thin, small slicesof fresh, rustic bread.

Recipe: Baked Spinach withThree Cheeses

1 medium onion, finely chopped1/2 cup crumbled feta cheese1/2 cup grated Edam cheese1/4 cup crumbled blue cheese2 tablespoons chopped fresh dill1/4 teaspoon ground nutmeg2 tablespoons fresh bread crumbs1 egg yolk3 tablespoons olive oil2 (10-ounce) packages ready-to-use freshbaby spinach2 tablespoons grated Parmesan cheese

  • Preheat oven to 350°C (175°C).Lightly butter a 12-inch oval gratin pan or an 11 x 7-inch bakingdish.
  • Mix onion, feta cheese, Edam cheese, bluecheese, dill, nutmeg, bread crumbs, egg yolk and nutmeg in asmall bowl. Set aside.
  • In a large pot or Dutch oven, heat oliveoil over medium-high heat. Add spinach and saute until wiltedand juices evaporate, about 3 minutes. Transfer to strainer;drain well. Shake strainer up and down to remove as much liquidas possible.
  • Arrange spinach in prepared baking dish.It will make a thin layer. Top with onion mixture. Sprinkle withParmesan. Bake until heated through, about 20 minutes.
  • Heat broiler. Broil spinach, about 6 inchesfrom broiler element, until cheese is golden brown on top, watchingclosely to prevent burning, about 2 minutes.
  • Serve warm or hot.

    Makes 4 side dish or 12 appetizer servings.

    This was lovely! In my opinion the filling was a little rich with so much goats’ cheese – I’d be temped to incorporate something milder, like ricotta, next time. I doubled the quantites for a party – everybody loved it. Also easy to prep in advance. I used frozen chopped spinach to save money – this meant it was doable without a blender – yay! Love the new look or think we’ve missed the mark? We want to hear your thoughts – good and bad – to make sure we make the new website as useful as possible.
