Baked Apple Streusel Pancake.

This yummy, streusel-topped apple ovenpancake is a special breakfast treat your family will ask foragain and again. If desired, garnish each serving with a dollopof vanilla yogurt.

Recipe: Baked Apple StreuselPancake

1/2 cup quick or old fashioned oats
1/4 cup all-purpose flour
1/4 cup brown sugar, firmly packed
3 tablespoons butter, melted
1/4 cup butter
1/3 cup granulated sugar
1 teaspoon ground cinnamon
3 medium-sized tart apples (about 1 1/4 pounds), peeled, coredand cut into thin wedges
1 cup all-purpose flour
1/2 cup quick or old fashioned oats
1 teaspoon baking powder
1/2 teaspoon kosher or sea salt
1 cup 2% milk
1 large egg, lightly beaten

  • For Streusel: In a small bowl, combineoats, flour, brown sugar and melted butter, stirring until crumbly.Set aside.
  • Preheat oven to 350°F (175°C).
  • For Pancake: Place butter in an 8-inchsquare glass baking dish.
  • Bake 3 to 5 minutes or until butter ismelted. Remove from oven.
  • Stir in sugar and cinnamon. Add apples;stir to coat apples.
  • Bake 10 to 15 minutes or until appleshave softened, stirring occasionally.
  • Meanwhile, in a large bowl, combine flour,oats, baking powder and salt; mix well.
  • In a small bowl, combine milk and egg;blend well. Add to dry ingredients all at once; stir just untildry ingredients are moistened. (Do not over mix.) Spoon overapple mixture in baking dish, spreading batter to sides of dish.Sprinkle reserved streusel evenly over batter.
  • Bake 25 to 30 minutes or until a woodenpick inserted in center comes out fairly clean. Serve warm.

    Combine all of the ingredients for the streusel topping in a small bowl, and mix until well combined, then scatter over the pancake batter in the pans.
