Baby Carrots with Tarragon recipe

Honeyed baby carrots seasoned with freshtarragon, a terrific herb with a mild anise and dill-like flavor.

Recipe: Baby Carrots withTarragon

1 1/2 pounds baby carrots, peeled andtrimmed1/4 cup water3 tablespoons minced fresh tarragon or3 teaspoons dried3 tablespoons butter1 tablespoon white wine vinegar1 1/2 tablespoons honeySalt and freshly ground black pepper totaste

  • Combine carrots, 1/4 cup water, 1 1/2tablespoons tarragon, butter, vinegarand honey in heavy large skillet. Bring to a boil. Reduce heatto medium; cover and simmer until carrots are almost tender,about 12 minutes.
  • Uncover; cook until carrots are tenderand liquid is reduced to glaze, about6 minutes longer. Season with salt and pepper. Transferto serving bowl. Sprinkle with 1 1/2 tablespoons tarragon.

    Serves 6.
