Awesome Carrot Cake recipe

This moist carrot cake is laced with whitechocolate chips and pecans and frosted with a luscious creamcheese frosting. Awesome, indeed!

Recipe: Awesome Carrot Cake

1 1/2 cups all-purpose flour
3/4 cup granulated sugar1/2 cup light brown sugar, packed2 teaspoons ground cinnamon
1 1/4 teaspoons baking soda3 large eggs3/4 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrot1 1/2 cups white chocolate chips
1/2 cup chopped pecans or walnutsCream Cheese Frosting:2 (3-ounce) packages cream cheese, softened1/2 cup butter, softened4 cups powdered sugar2 teaspoons vanilla extract

  • Heat oven to 350°F (175°C). Greaseand flour two 8-inch round baking pans.
  • In a medium bowl, mix together flour,granulated sugar, brown sugar, cinnamon and baking soda; setaside.
  • In a large bowl, beat eggs, oil and vanilla.
  • Add flour mixture to egg mixture and mixwell. Stir in carrot, white chocolate chips and pecans. Pourinto prepared pans.
  • Bake 30 to 35 minutes or until woodenpick inserted in center comes out clean. Cool 10 minutes; removefrom pans to wire rack. Cool completely.
  • For Cream Cheese Frosting: In a largemixing bowl, beat cream cheese and butter until smooth. Graduallyadd powdered sugar and vanilla, beating until smooth.
  • Frost cake. Store cake in refrigerator.

    Makes 10 to 12 servings.
