Apricot Bars recipe

A simple crumb apricot bar, half the doughis pressed into the baking pan, spread with apricot preserves,sprinkled with chopped walnuts and then topped with the remainingdough which is crumbled on top.

Recipe: Apricot Bars

3/4 cup granulated sugar1 cup vegetable shortening2 large eggs3 1/2 cups all-purpose flour1 teaspoon salt2 teaspoons baking powder1 cup apricot preserves1 cup chopped walnuts (optional)Ground cinnamon for sprinkling

  • Heat oven to 350°F (175°C).Grease 9 x 13 x 2-inch baking pan; set aside.
  • In large mixing bowl, cream together thesugar, shortening and eggs. Stir inflour, salt and baking powder, mixing well.
  • Divide the dough in half. Spread halfof dough in prepared baking pan. Spreadpreserves over dough. Sprinkle walnuts overpreserves, if desired and then sprinkle the cinnamonon top.
  • Crumble second half of dough and spreadevenly over top. Press down gently.
  • Bake for 30 minutes or until golden. Cooland cut into squares.

    Makes 2 dozen bars.
