Apple Crumb Cake recipe

A quick and easy apple crumb cake thanksto an all-purpose biscuit baking mix. Serve with mugs of steamingcoffee.

Recipe: Apple Crumb Cake

2 1/4 cups biscuit baking mix
3 tablespoons granulated sugar
1 large egg
1 cup sour cream
2 teaspoons grated lemon peel
1 apple, pared, quartered, cored and thinly slicedCrumb Topping:
1/3 cup biscuit baking mix
2 tablespoons butter
3 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

  • Preheat oven to 400°F (205°C).Grease a 9 x 9 x 2-inch square pan. Set aside.
  • Combine biscuit mix and sugar in a largebowl. Set aside.
  • In a small bowl, beat egg, blend in sourcream and lemon peel. Add all at once to dry mixture. Stir justuntil moist. Spoon into prepared baking pan. Arrange apple slicesover batter.
  • Combine topping ingredients together untilcrumbly. Sprinkle crumb topping on top of apple slices. Bakefor 20 to 25 minutes or until center springs back when pressedlightly with fingertips. Cool in pan on wire rack. Cut into squaresand serve warm.

    Makes 9 servings.
