Recipe: Angel Hair Pastawith Lemon and Garlic

16 ounces angel hair pasta1/2 cup fresh basil, coarsely chopped1/2 cup freshly grated Parmesan cheese2 tablespoons extra virgin olive oil8 cloves garlic, finely minced1 1/4 cups dry white wine1/2 cup fresh lemon juice2 1/2 cups seeded and chopped vine-ripetomatoes1 teaspoon kosher or sea salt1/4 teaspoon freshly ground black pepperor to tasteAdditional freshly grated Parmesan cheesefor sprinkling (optional)

  • Measure and prepare all ingredients inadvance.
  • Cook the pasta and place in large servingbowl. Add the basil and Parmesan cheese;set aside and keep warm.
  • In large a skillet heat the olive oiland saute the garlic just until it begins to change color. Removeskillet from heat and add the wine. Returnto the heat and cook for another 2to 3 minutes, or until the wine hasbeen reduced by half. Stir in the lemonjuice and tomato and remove from heat.
  • Pour hot lemon/tomato mixture over pastamixture in the serving bowl, add saltand pepper to taste. Toss to mix.
  • Serve topped with a sprinkling of Parmesancheese, if desired.
